Pine Nut Cookies (Amaretti con Pignoli)

Candy and rich, soft and chewy with a crunchy pine nut crust, these cookies are tremendous easy to map, naturally gluten-free, and in reality delicious. Pine Nut Cookies (Amaretti con Pignoli) are featured in the Homegrown Heroes episode of Lidia Celebrates The US.

Formula

  • 1 pound canned almond paste
  • 1 ½ cups sugar
  • 3 trim egg whites
  • 1 cup pine nuts (no longer compulsory)
  • ¼ cup confectioners’ sugar, or as wished (no longer compulsory)

    Arrange one rack in the upper third of the oven and the different in the lower third. Preheat the oven to 350 levels. Line two baking sheets with parchment paper. Disintegrate the almond paste into a mixing bowl. Beat with a handheld electric mixer till finely crumbled. Sprinkle the sugar over the almond paste and proceed to beat till the sugar is included.
