Ramp and Mushroom Frittata

I’m ramp crazy. Each spring I peek them out and soar for joy when I obtain them within the shop. Formulation

  • 2 tablespoons

    olive oil


  • 1/2 pound

    freshly ground unlit pepper


  • 1/2 teaspoon

    kosher salt

Directions
  1. Preheat the oven broiler.
  2. Heat a tall skillet over medium high warmth. Once warmth add the olive oil, adopted by the ramp bulbs and mushrooms. Sauté, stirring continually except caramelized, about 5 minutes.
  3. Add the ramps leaves and sauté an additional minute or two. Evenly distribute the formulation within the skillet. Spin the eggs except properly mixed and frothy and add the eggs to the skillet. Season with salt and pepper. Cook dinner on the stovetop except the eggs are beginning to website online. Switch all of them the draw thru the skillet as though you make an omelet, scraping the cooked bits, and allowing the liquid egg to earn within the holes.
  4. Once the eggs are about halfway cooked, put aside within the broiler for 1 minute. Review doneness. Continue cooking below the broiler, checking at the least every 30 seconds, except cooked to your liking.
