A light an tasty Rooster Francaise (aka French vogue rooster) in a lemon butter sauce that is basically easy to kind!
Formulation:
- 2 tablespoons oil
- 1 pound boneless and skinless rooster breasts, butterflied and pounded thin
- salt and pepper to taste
- 1/4 cup flour (gluten-free for gluten-free)
- 2 eggs, calmly beaten
- 1 tablespoon butter
- 2 cloves garlic, chopped
- 1 pinch red pepper flakes (no longer obligatory)
- 1 cup rooster broth (or white wine)
- 1/4 cup lemon juice
- 1 tablespoon butter
- 2 tablespoons parsley, chopped
Instructions:
- Heat the oil in a pan over medium-high heat.
- Season the rooster breasts with salt and pepper to taste, dredge within the flour, shake off any excess, dip into the egg, shake off excess, and fry within the oil till calmly golden brown on both side earlier than setting aside.
