Lift sugar, cream of tartar, if the converse of, and 3 tablespoons water to a boil in a medium saucepan over medium-excessive heat, stirring to dissolve sugar. Boil till sugar begins to caramelize in spots. Scuttle with a heatproof spatula (this can motivate sugar cook evenly) and cook, stirring infrequently, till the coloration of honey, 5 to 7 minutes. Minimize heat to medium-low and cook, stirring infrequently, till caramel is a deep amber coloration, about 5 minutes longer.
Step 2
Take away caramel from heat and fastidiously plod in tahini and butter, then cream, sesame seeds, and salt. Let chilly rather before serving.
