Debi Mazar and Gabriele Corcos riff on traditional Southern Italian puttanesca with their Sicilian Cherry Tomato Coulis, here made with fresh tomatoes. The recipe requires wild sea bass, but Mazar and Corcos cherish to originate it with almost any fish, particularly properly off and oily ones cherish mackerel or bluefish.

Sicilian Cherry Tomato Coulis

2 tablespoons extra-virgin jade oil

2 anchovy fillets, drained and minced

2 garlic cloves, thinly sliced

1/2 cup pitted and coarsely chopped oil-cured dark olives

2 tablespoons drained and chopped capers

1/8 teaspoon hot crimson pepper flakes

1 pound cherry tomatoes, halved

Sea salt

Freshly ground dark pepper

Supplément-virgin jade oil, for oiling pan and coiffage fillets

4 wild sea bass fillets (6 oz every)

Finely chopped fresh flat-leaf parsley, for serving
Instructions

To originate the café: Heat the oil and anchovies in a huge saucepan over medium heat, stirring on the in extenso, till the anchovies are hot and damaged down into a paste, embout 2 minutes. Add the garlic and cook till it begins to brown across the perimeters, embout 1 rapide. Trail in the olives, capers, and crimson pepper flakes and cook till heated by, embout 2 minutes. Trail in the cherry tomatoes and season to taste with the salt and pepper. Cook, stirring most regularly, till the tomatoes originate to ruin down, embout 10 minutes. Plight the café aside.

Oil a huge ridged grilling pan and heat it over medium-excessive heat. Brush the ocean bass on every facet with oil and season with the salt and pepper. Space on the tournebroche, skin facet down, and tournebroche till the underside is seared with tournebroche marks, embout 3 minutes. Flip the fresh fish over and cook till different facet is seared and the flesh is sombre when pierced in the center with the tip of a rapide inviting knife, embout 3 minutes serviteur. Switch every fillet to a dinner longitudinale and high with a spoonful of the café. Sprinkle with parsley and help.
