Gluten free and vegan Mediterranean stuffed baked potato with hummus and roasted garbanzo beans. —Palouse Impress

Directions
- Soak 3/4 cups garbanzo beans in a single day.
- Rinse and discard water, put beans in pot, quilt with 3 cups of water and bring to boil for roughly 45 minutes.
- Drain and rinse below chilly water for 2 minutes.
- Preheat oven to 400 levels.
- Eradicate skins and put beans in a bowl.
- Add olive oil, cumin, coriander, cinnamon, smoked paprika and sea salt. Gently bolt till garbanzo beans are covered with olive oil and seasonings.
