Vanilla Bean and Green Grape Rooster with Vanilla Scented Pilaf

Ingredients:

  • For the Vanilla Bean and Green Grape Rooster:
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 rooster breasts
  • 1 vanilla bean
  • 2 cups white wine
  • 1 tablespoon white wine vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1 cup sliced green onions (about 6)
  • 2 cups green grapes, halved if tremendous
  • For the Vanilla-Scented Rice Pilaf:
  • 1 and 1/2 cups prolonged grain white rice (I fancy Basmati)
  • 2 and 1/2 cups water
  • 1 teaspoon vanilla
  • 2 tablespoons butter
  • 1 onion, finely diced
  • 1/4 cup golden raisins
  • 1/4 cup slivered almonds
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
