- 3 tablespoons honey
- 1/4 teaspoon finely grated nutmeg
- 1/4 teaspoon ground cloves
- 1 cup brown sugar
- 1/4 cup bourbon
- Glaze:
- 1 1/2 cups ham drippings and/or ham inventory
- 1/4 cup brown sugar
- 1/2 teaspoon dry mustard
- 1 pinch finely grated nutmeg
- 1 pinch ground cloves
