Sugar Brioche Tarts With Berries & Vanilla Cream

Ingredients:

  • The brioche:
  • 1/4 cup whole milk
  • 1/4 ounce active dry yeast (1 packet)
  • 2 ounces all-cause flour (about 1/2 cup minus 2 tablespoons)
  • 4 broad eggs
  • 10 ounces all-cause flour (about 2 3/4 cups)
  • 1 ounce sugar (about 2 tablespoons + 1 teaspoon)
  • Pinch kosher salt
  • 2 sticks ( 1/2 pound) chilly unsalted butter
  • The pastry cream:
  • 2 cups whole milk
  • 10 tablespoons sugar
  • 2 teaspoons vanilla extract
  • Seeds scraped from 1/2 vanilla bean
  • 2 broad egg yolks
  • 1 broad whole egg
  • 1/4 cup cornstarch
  • 1/2 teaspoon kosher salt
  • 1/2 stick (4 tablespoons) unsalted butter, lower in items
  • To garnish:
  • Heavy cream, for brushing
  • 1 pint raspberries
  • 1/2 pint blackberries
  • Turbinado sugar, for sprinkling
