- The brioche:

- 1/4 ounce active dry yeast (1 packet)
- 2 ounces all-cause flour (about 1/2 cup minus 2 tablespoons)
- 4 broad eggs
- 10 ounces all-cause flour (about 2 3/4 cups)
- 1 ounce sugar (about 2 tablespoons + 1 teaspoon)
- Pinch kosher salt
- 2 sticks ( 1/2 pound) chilly unsalted butter
- The pastry cream:
- 2 cups whole milk
- 10 tablespoons sugar
- 2 teaspoons vanilla extract
- Seeds scraped from 1/2 vanilla bean
- 2 broad egg yolks
- 1 broad whole egg
- 1/4 cup cornstarch
- 1/2 teaspoon kosher salt
- 1/2 stick (4 tablespoons) unsalted butter, lower in items
- To garnish:
- Heavy cream, for brushing
- 1 pint raspberries
- 1/2 pint blackberries
- Turbinado sugar, for sprinkling
