- 1 cup plus 2 tbsp. mirin
- 1 cup plus 2 tbsp. sake
- 2 tbsp. sesame oil
- 1 tbsp. granulated sugar
- 1 tbsp. kosher salt
- 10 cloves garlic, minced
- 1 (6″) portion ginger, peeled and minced
- 1 cup soy sauce
- 1⁄2 cup turbinado sugar
- Canola oil, for frying
- 3⁄4 cup potato starch
- Ground sansho, for garnish
- Lemon wedges, for serving
