System:
- 280g butter
- ¾ cup raw sugar
- ¾ cup brown sugar
- 2 eggs
- 1½ tsp vanilla
- 2 cups unpleasant flour
- 1 tsp baking powder
- 1 tsp bicarb soda
- ½ tsp sea salt flakes, or ¼ tsp overwhelmed desk salt
- 2½ cups rolled oats (elope 1½ cups via a meals processor quick till they resemble mistaken breadcrumbs)
- 130 g pecans
- 2 cups bittersweet/semisweet chocolate chips
Instructions:
- Preheat oven to 180C.
- Beat the butter and sugars till creamy, as a minimum 2 minutes.
- Mix within the eggs and vanilla.
- Mix flour with baking powder, bicarb soda and sea salt flakes. Add to the rolled oats.
- Add the flour combination to the batter. Mix within the chocolate chips and pecans.
- Exercise a medium cookie scoop to train the dough onto the tray – I use a 40ml cookie scoop yielding 50g of cookie dough. Press down on every cookie gently to flatten (about 7cm across), leaving ample room in between to originate larger.
- Bake for 10-12 minutes or till the sides of the cookies are a gradual-weight golden brown. It’s worth rotating baking trays midway to originate definite the cookies brown evenly. The cookies will customarily gaze honest barely cooked when you rob them out – fabricate no longer overbake!
