Substances

  • 2 fillet tail steaks (about 200g every), or 2 sirloin steaks, tubby trimmed
  • 2 eggs, beaten
  • 1⁄2 tsp cayenne pepper
  • steamed greens and corn cobs, to assist (now not obligatory)
  • vegetable oil, for frying

For the spice mix coating

  • 4 tbsp uncomplicated flour
  • 1 tbsp cornflour
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1⁄2 tsp ground cumin
  • 1⁄2 tsp ground cinnamon
  • 1⁄2 tsp murky pepper

For the sauce (now not obligatory)

  • 1 tbsp flour
  • 1 hen stock dice
  • 275ml milk
  • 1 tbsp thyme leaves
  • squeeze of lemon juice

Manner

  • STEP 1

    Set up the steaks on a board and bash with a rolling pin till about half the original thickness. Mix the eggs with the cayenne in a bowl. Mix the substances for the spice mix with a titanic pinch of salt in a separate shallow dish.

  • STEP 2

    Dip the steaks into the egg, then the spice mix, turning to coat. Pour the oil correct into a titanic non-stick frying pan till the sinister of the pan is coated. Fry the steaks over a high warmth for 2 mins till crisp, then flip and fry for 2 mins more. Switch to a plate and abet warm.

  • STEP 3

    For of us that’re making the sauce, pour away all but 1 tbsp oil from the pan and sprint within the flour, cooking till browned. Fall aside within the stock dice. Slowly pour within the milk, whisking till unruffled and completely integrated. Lower the warmth to a simmer and cook dinner for 4-5 mins. Season. Add the thyme and quite quite loads of murky pepper, then squeeze within the lemon juice to style. Encourage the steaks with the sauce, and greens and corn, whenever you like.
