  • 1 tablespoon baking powder
  • ½ teaspoons baking soda
  • 1 teaspoon kosher salt
  • 8 tablespoons unsalted butter, chilled and cut into ½-run-thick cubes
  • 1 cup buttermilk, plus extra for brushing
  • 4 oz. English Stilton blue cheese, roughly crumbled
  • ⅓ cups walnuts, roughly chopped
  • Apple butter or apple jam, for serving (retailer-bought is okay)
