Gluten Free Chocolate Chip Toffee Bits Cookie Bars (Congo Bars)

I’ve made these congo bars so many cases that AJ fine much calls them mine, even supposing they were tailored from the superior baker and blogger David Lebovitz‘s The Noteworthy E book of Chocolate (who, himself, bought it from a recipe by San Francisco Pastry Chef, and member of the The Baker’s Dozen Flo Braker). Formula:

  • 11 tbsp unsalted butter (melted and cooled to room temperature)
  • 2 1/3 cup gloomy brown sugar

  • 1 cup almond flour

  • 1 cup sorghum flour
  • 1/2 cup tapioca flour
  • 1/2 cup potato starch
  • 1 1/2 tsp xantham gum

  • 1/2 tsp salt
  • 2 tsp vanilla
  • 12 ozchopped bittersweet chocolate
  • 3/4 cup toffee bits

Instructions:

  1. Preheat the oven to 350 degrees. Line a 10″ x 15″ x 1″ baking pan with aluminum foil – leaving a pair of inches striking over the aspect of the pan. Spray with a flavorless cooking oil.
