Homemade Rooster Nuggets

Ingredients
  • 1lb organic rooster breast, diced into chunks

  • 1 organic egg

  • 2 cloves garlic, peeled

  • 1 cup gluten-free bread crumbs

  • 2 tsp herbs de Provence

  • olive oil

  • sea salt & cracked pepper

Directions
  1. Preheat the oven 450 degrees & frivolously oil a trim baking pan. In a shallow bowl, mix together bread crumbs, herbs & a pinch of seasoning.
  2. Put the rooster, egg, garlic & a pinch of sea salt & cracked pepper in a food processor & blitz till entirely tender. The aggregate with be pretty wet, but that’s truthful.
  3. With damp or oiled hands, from the meat into shrimp balls. Roll thru crumb combination, faucet off the excess, & space on the baking sheet & press a shrimp flat. Repeat till the aggregate is gone.
  4. Bake for 10 minutes. Flip on the broiler, transfer to the close shelf & cook dinner for 2 more minutes. Support with organic ketchup or homemade hoisin sauce.
