Ital Stew

  1. In a stockpot, warm the olive oil over medium heat, then add the onion. Sauté except translucent and softened, about 4 minutes. Add the garlic, allspice and thyme and sauté except fragrant, about 1 minute.

  2. Add the fairway onions, bay leaves, coconut milk and water. Lift to a simmer, then add the pumpkin and taro and cook dinner for five minutes. Slash heat if it turns into a boil. Add the potatoes and cook dinner for one more 3 minutes. Plod within the okra, plantain and carrots and cook dinner for one more 5 minutes. One way or the other, take away the fairway onions (and any bay leaves and thyme sprigs), then add the collard greens; simmer except darkened and incandescent green, about 4 extra minutes. At this point, all of the greens may perchance merely serene be without recount pierced with a fork.

  3. Remove from heat and add the lime juice. Add salt and pepper to model; poke within the cilantro and encourage.

Notes

To present the stew extra spice, add a Scotch bonnet or habanero pepper when adding the coconut milk and water and take away sooner than serving. For extra spice, burst the pepper within the stew sooner than removing it.
