Description

  • 2 cups basmati rice
  • 1 or 2 lope cinnamon
  • 45 green cardamoms
  • 45 cloves
  • 45 entire dusky peppercorns
  • 1 mammoth onion, thinly sliced
  • 1.5 to 2 tsp odd sugar or 3 tsp natural unrefined cane sugar
  • 2 tbsp oil or ghee
  • 3.5 to 4 cups water
  • salt as required

  2. after 30 mins, drain the rice and protect aside.
  3. heat oil or ghee in a thick bottomed pot.
  4. add the cinnamon, cardamom, cloves and dusky pepper.

  6. add the sliced onions.
  7. lope and fry the onions till they accumulate translucent and are softened.
  8. now add sugar and lope.
  9. proceed frying the onions till they caramelize or accumulate browned.
  10. the sugar will additionally caramelize.
