Ingredients:
- For the Vanilla Bean and Green Grape Rooster:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 4 rooster breasts
- 1 vanilla bean
- 2 cups white wine
- 1 tablespoon white wine vinegar
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1 cup sliced green onions (about 6)
- 2 cups green grapes, halved if tremendous
- For the Vanilla-Scented Rice Pilaf:
- 1 and 1/2 cups prolonged grain white rice (I fancy Basmati)
- 2 and 1/2 cups water
- 1 teaspoon vanilla
- 2 tablespoons butter
- 1 onion, finely diced
- 1/4 cup golden raisins
- 1/4 cup slivered almonds
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground pepper
