- 1 lb. pearl onions, peeled
- 1 (2 3/4-lb.) veal shank, deboned and crop into 2-whisk cubes

- 1 tsp. floor allspice
- 1 tsp. freshly grated nutmeg
- 1 serrano chile, stemmed, seeded and finely choppped
- 4 cups veal or rooster inventory
- 16 sheets phyllo dough (8 oz.)
