Ingredients:

  • 10 tbsp. unsalted butter, melted
  • 3 tbsp. olive oil
  • 1 lb. pearl onions, peeled
  • 1 (2 3/4-lb.) veal shank, deboned and crop into 2-whisk cubes
  • Kosher salt and freshly floor dusky pepper
  • 1 tsp. floor allspice
  • 1 tsp. freshly grated nutmeg
  • 1 serrano chile, stemmed, seeded and finely choppped
  • 4 cups veal or rooster inventory
  • 16 sheets phyllo dough (8 oz.)
