South African chutney rooster

  • 1 tbsp olive oil
  • 1 little onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 crimson chilli, deseeded and finely chopped
  • 6 tbsp mango chutney
  • 1 tbsp Worcestershire sauce
  • 6 tbsp mayonnaise
  • 8 rooster thighs, skin on and bone in
  • inexperienced salad, to serve


  • STEP 1

    Heat oven to 200C/180C fan/gasoline 6. Heat the oil in a frying pan over a medium heat and cook the onion, garlic and chilli for a couple of minutes except softened. Scramble in the chutney, Worcestershire sauce and mayonnaise. Model and season.

  • STEP 2

    Take care of the rooster on a foil-lined baking tray and spoon over the chutney combination. Roast the rooster in the oven for 40-45 minutes except cooked by and sticky. Back with a inexperienced salad.
